Ingredients

  • Ripe vine tomatoes
  • Fresh mozzarella cheese
  • Artisan sourdough bread
  • Fresh basil leaves
  • Extra virgin olive oil
  • Aged balsamic vinegar
  • Sea salt
  • Freshly ground black pepper
  • Garlic clove

Instructions

  • Start by acquiring the highest quality ingredients: ripe vine tomatoes, fresh mozzarella from a reputable cheesemonger, a loaf of artisan sourdough bread, fresh basil leaves, extra virgin olive oil, aged balsamic vinegar, sea salt, and freshly ground black pepper.
  • Pre-heat your broiler to high and position a rack in the upper third of the oven.
  • Slice the sourdough bread into 1-inch thick pieces, aiming for a uniform thickness to ensure even toasting.
  • Lightly brush each slice of bread with extra virgin olive oil on both sides using a pastry brush, to impart flavor and aid in crisping.
  • Place the oiled slices on a baking sheet and broil in the oven for about 1-2 minutes on each side, or until golden and slightly charred at the edges, monitoring carefully to prevent burning.
  • While bread is toasting, slice the ripe tomatoes and fresh mozzarella to a thickness of approximately 1/4-inch, ensuring they are uniform for consistent cooking and presentation.
  • Once the bread is toasted, immediately rub one side of each slice with a garlic clove cut in half, to infuse it with a subtle aroma and taste.
  • Arrange the tomato and mozzarella slices on the garlic-rubbed side of the bread, alternating them and slightly overlapping for visual appeal.
  • Return the assembled toasts to the broiler for 30-60 seconds, just until the mozzarella begins to melt and the tomatoes are warmed through.
  • Remove the toasts from the oven and promptly transfer them to a serving platter or individual plates.
  • Tear fresh basil leaves by hand and scatter them over the top of the warm toast, allowing the heat to release the herb's aroma.
  • Drizzle a high-quality aged balsamic vinegar over the toasts in a zigzag motion for a vibrant contrast in both flavor and color.
