  • Prepare the Spiced Lentil Patties: Rinse 1 cup of lentils and soak for 2 hours. Drain and cook in fresh water until tender. Drain again and set aside to cool.
  • Mash the cooked lentils in a bowl. Stir in 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon ground turmeric, 1/2 teaspoon freshly grated ginger, a pinch of asafoetida (hing), and salt to taste.
  • Fold in 1 tablespoon chopped fresh chives and 2 tablespoons finely chopped cilantro. Mix in 1/4 cup spelt flour to bind the ingredients. If mixture is too wet, add additional flour until proper consistency is reached.
  • Shape the mixture into 4 equal-sized patties. Heat 2 tablespoons ghee in a non-stick skillet over medium heat and cook the patties until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and keep warm.
  • Prepare the Mango Chutney: Peel and dice 2 ripe mangoes. Place in a saucepan with 1 tablespoon apple cider vinegar, 1/4 cup water, 2 tablespoons maple syrup, 1 teaspoon grated ginger, a pinch of ground cinnamon, and a pinch of salt.
  • Cook the mango mixture over medium heat, stirring occasionally, until the mangoes are soft and the chutney has thickened, about 15-20 minutes. Remove from heat and allow to cool.
  • Make the Cucumber Raita: Grate 1 medium-sized cucumber and squeeze out the excess water. In a bowl, mix the grated cucumber with 1 cup plain yogurt, 1/2 teaspoon ground cumin, 1 tablespoon chopped mint, and salt to taste. Refrigerate until ready to use.
  • Assemble the Breakfast Sandwich: Slice open 4 soft rolls (multigrain, rye, or another ancient grain variety) and lightly toast them, if desired.
  • Spread a generous amount of mango chutney on the bottom half of each roll.
  • Place one Spiced Lentil Patty on top of the chutney on each roll.
  • Top each patty with a dollop of Cucumber Raita.
  • If you'd like to add some greens, place a few fresh baby spinach leaves or arugula on top of the raita.
  • Close the sandwiches with the top halves of the rolls and serve immediately.
