Instructions
- Into the ghee, grate the zest of two fresh, organic lemons, taking care to only grate the yellow skin and not the white pith underneath which can impart bitterness.
- Incorporate a sweetening agent of your choice, adding 1 tablespoon of either raw honey, maple syrup, agave, or coconut sugar. If a granulated sweetener is used, ensure it is fully dissolved and integrated into the butter.
- To enhance the lemon flavor, squeeze in the juice of one of the zested lemons, being careful to avoid any seeds falling into the bowl. Stir the mixture well to combine all the elements.
- Add a pinch of finely ground Himalayan salt or sea salt to the mixture. This will balance the sweetness and elevate the lemony flavor.
- Whisk the ingredients together until the mixture is homogenous and has a light, airy texture. You may use a hand whisk or an electric mixer set to a low speed.
- Taste the lemon poppyseed butter to ensure the balance of flavors is to your preference. Adjust the sweetness or lemon intensity if necessary, unobtrusively maintaining the sattvic principles.
