- Selected citron or other citrus fruit for zesting and juicing
- cup cup of fresh citrus juice, strained
- 1 cup coconut sugar
- 4 large eggs, beaten
- 1 vanilla bean
- 3 tablespoons ghee
Instructions
- Prepare the citrus by washing and drying your selected citron or other citrus fruit, then zesting it carefully to avoid the bitter pith.
- Slice the citrus in half and juice it until you have ½ cup of fresh citrus juice. Strain the juice through a fine-mesh sieve to remove any seeds and pulp, ensuring a smooth curd texture.
- In a double boiler, combine 1 cup of coconut sugar with the citrus zest, whisking them together until fully integrated.
- Add 4 large beaten eggs to the sugar and zest mixture, whisking continuously until thoroughly combined.
- Slowly pour the strained citrus juice into the egg mixture, continuing to whisk. Ensure the water in the bottom of the double boiler is simmering gently and not touching the bottom of the top pot or bowl.
- Slice a vanilla bean in half lengthwise and scrape out the seeds using the back of your knife. Add the vanilla seeds to the curd mixture for a nuanced depth of flavor.
- Cook the mixture over the double boiler, stirring constantly with a rubber spatula, making sure to scrape the bottom and sides of the bowl. Cook until the mixture thickens and coats the back of a spoon, which should take about 10 minutes.
- Once thickened, remove the curd from the heat and stir in 3 tablespoons of ghee, one tablespoon at a time, until fully incorporated and the curd has a glossy sheen.
- Pour the curd through a fine-mesh sieve into a clean bowl to remove any coagulated egg or zest remnants, ensuring a silky-smooth texture.
- Cover the curd with a piece of parchment paper or plastic wrap pressed directly against the surface to prevent a skin from forming.
- Cool the curd to room temperature, then refrigerate for at least 4 hours or until fully set and chilled.
- Before serving, give the curd a gentle stir to reincorporate any settled ingredients and assess the consistency. If it's too thick, you may whisk in a small amount of warm water (a teaspoon at a time) to reach the desired silkiness.
