Equipment

Chef's knife
Potato masher

Ingredients

  • 3 large ripe avocados
  • 1 teaspoon lime zest
  • 2 tablespoons fresh lime juice
  • 1 fresh red chili pepper, seeded and finely diced
  • A small handful of fresh cilantro leaves, finely chopped
  • 1/2 cup fresh pineapple, peeled and diced up to 3/4 cup as preferred
  • 1 tablespoon maple syrup or agave nectar
  • 1/4 teaspoon fine sea salt plus more to taste

Instructions

  • Begin by selecting ripe avocados, ensuring they yield slightly to gentle pressure. You will need approximately 3 large avocados for this recipe.
  • Using a chef's knife, slice the avocados in half lengthwise around the pit and twist the halves to separate. Remove the pit with the edge of your knife and gently scoop out the avocado flesh with a spoon into a mixing bowl.
  • With a fork or a potato masher, mash the avocados to your desired consistency, leaving some chunks for texture if preferred.
  • Zest one lime to collect 1 teaspoon of lime zest, then juice the limes until you have 2 tablespoons of fresh lime juice. Add both zest and juice to the mashed avocado.
  • Seed and finely dice 1 fresh red chili pepper, removing the ribs for less heat if desired. Finely chop a small handful of fresh cilantro leaves. Add both the chili and cilantro to the avocado mixture.
  • Peel and dice 1/2 cup of fresh pineapple into small, 1/4-inch cubes. If you prefer a more pronounced pineapple flavor, you can increase the quantity up to 3/4 cup, but be careful not to overpower the avocado.
  • Gently fold the diced pineapple into the avocado mixture, maintaining the integrity of the avocado and pineapple pieces.
  • Drizzle 1 tablespoon of maple syrup or agave nectar into the guacamole to add a subtle sweetness that complements the pineapple.
  • Season the guacamole with fine sea salt, adjusting to your taste. Start with 1/4 teaspoon and add more as necessary after tasting.
  • Stir the mixture gently to combine all ingredients without overmixing, ensuring the guacamole remains chunky and well-textured.
  • Before serving, let the guacamole sit for 10 minutes to allow the flavors to meld. During this time, prepare your serving dish and accompaniments.
  • Taste and adjust the seasoning with additional salt, lime juice, or maple syrup/agave nectar if necessary.
  • Transfer the Pina Colada Guacamole to a serving bowl, garnish with an extra sprinkling of chopped cilantro and a few finely diced pineapple pieces for presentation.
