Ingredients

  • 1 cup mixed ancient grains spelt flakes, rye flakes, rolled oats
  • 1/4 cup raw almonds
  • 1/4 cup raw walnuts
  • 2 tablespoons raisins
  • 2 tablespoons dried apricots, chopped
  • 1 apple
  • 2 tablespoons honey or maple syrup
  • 1 cup fresh orange juice
  • 1 cup almond milk or coconut milk
  • 1 teaspoon ground cinnamon
  • Pinch of cardamom

Instructions

  • Gather and prepare the following sattvic ingredients: 1 cup of mixed ancient grains (such as spelt flakes, rye flakes, and rolled oats), 1/4 cup of raw almonds, 1/4 cup of raw walnuts, 2 tablespoons of raisins, 2 tablespoons of dried apricots (chopped), 1 apple, 2 tablespoons of honey or maple syrup, 1 cup of fresh orange juice, 1 cup of almond milk or coconut milk, 1 teaspoon of ground cinnamon, and a pinch of cardamom.
  • In a large mixing bowl, combine the mixed ancient grains, almonds, walnuts, raisins, and dried apricots. Stir to distribute the ingredients evenly.
  • Core and grate the apple, including the skin for added fiber, and add it to the bowl with the dry mixture.
  • Pour the honey or maple syrup, orange juice, and almond or coconut milk over the dry ingredients.
  • Add the ground cinnamon and cardamom, and stir the mixture until all ingredients are well combined.
  • Cover the bowl with a lid or plastic wrap and refrigerate overnight to allow the grains to absorb the liquid and flavors to meld—the hallmark process of traditional Bircher Muesli.
