Ingredients
Dry Ingredients:
- 1 cup 120g spelt flour (or whole wheat pastry flour)
- 1 teaspoon aluminum-free baking powder
- 1/4 teaspoon Himalayan pink salt
Wet Ingredients:
- 1/2 cup 100g organic coconut sugar
- 1/2 cup 113g clarified ghee (in place of butter)
- 2 large organic free-range eggs
- 1/4 cup 60ml almond milk (or any plant-based milk)
- 1 tablespoon pure lavender extract ensure it's high-quality
Fold-in:
- 2 cups 310g fresh organic blueberries
Garnish:
- Edible lavender flowers optional
- A light dusting of powdered sugar optional
Instructions
Oven Preparation:
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin with a small amount of ghee.
Dry Ingredients:
- In a large bowl, whisk together the spelt flour, baking powder, and Himalayan pink salt.
Wet Ingredients:
- In a separate bowl, whisk together the coconut sugar, melted ghee, eggs, almond milk, and lavender extract until well combined.
Combine Wet and Dry:
- Carefully fold the wet ingredients into the dry ingredients until just combined. Avoid overmixing to ensure the muffins are light and fluffy.
Add Blueberries:
- Gently fold in the blueberries, being careful not to burst them.
Bake:
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Garnish:
- Allow the muffins to cool in the tin for a few minutes, then transfer to a cooling rack.
- Before serving, garnish with edible lavender flowers and a dusting of powdered sugar for an elegant touch.
