Dough:
- 2 cups spelt flour
- 1/4 cup raw honey or pure maple syrup
- 1 packet 2¼ tsp active dry yeast
- 1/2 cup warm almond milk unsweetened and preservative-free
- 1/4 cup ghee melted
- 1 large organic free-range egg (or a vegan alternative like a flaxseed egg)
- Pinch of Himalayan pink salt
Apricot-Almond Filling:
Natural Glaze:
- 1 cup organic powdered sugar unrefined if available
- 2-3 tablespoons almond milk
- 1/2 teaspoon pure vanilla extract
Instructions
Prepare the Dough:
- In a large bowl, mix spelt flour, honey or maple syrup, and yeast. Add warm almond milk, melted ghee, egg, and a pinch of salt. Knead until smooth. Let the dough rise in a warm, calm environment until it doubles in size, about 1 hour.
Make the Filling:
Assemble the Swirls:
- Roll out the dough on a floured surface to form a rectangle. Spread the apricot-almond filling evenly over the dough.
- Roll the dough tightly from one long side and cut into 12 equal slices.
- Place the slices in a greased baking dish, leaving some space between each for expansion.
Bake:
- Preheat your oven to 350°F (175°C). Bake the swirls for 25-30 minutes or until they turn golden brown.
Prepare the Glaze:
Finish and Serve:
- Drizzle the glaze over the warm swirls just before serving.
