  • 1 pound fresh plums, washed and sliced into wedges
  • 1 cup pumpkin seeds
  • 1/2 cup shredded coconut
  • 2 tablespoons maple syrup
  • 1 tablespoon melted coconut oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  • Preheat your oven to 375°F.
  • Spread 1 cup of pumpkin seeds on a baking sheet.
  • Bake for 8 to 10 minutes until lightly golden brown.
  • Remove from oven and let cool.
  • Rinse and clean 1 pound of fresh plums, then slice them into wedges.
  • In a medium bowl, mix together the pumpkin seeds, plum wedges, and 1/2 cup of shredded coconut.
  • Add 2 tablespoons of maple syrup, 1 tablespoon of melted coconut oil, 1/4 teaspoon of salt, and 1/2 teaspoon of cinnamon and mix until everything is evenly coated.
  • Spread the plum & pumpkin seed mix onto the baking sheet and bake for 15 minutes until lightly toasted.
  • Remove from oven and let cool.
