Ingredients
- 2 medium-sized sweet potatoes, peeled and diced
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground cloves
- 1 teaspoon of ground cardamom
- 1 teaspoon of ground ginger
- 1 teaspoon of ground nutmeg
- A generous pinch of sea salt
- 1 quart of vegetable stock
- 1/2 cup of slivered almonds, plus extra for garnish
Instructions
- Begin by preheating the oven to 400°F (204°C)
- While the sweet potatoes are roasting, bring 1 quart of vegetable stock to a gentle boil in a medium-sized pot.
- When the sweet potatoes have finished roasting, add them to the pot of boiling vegetable stock
- Blend the soup with an immersion blender for a smooth consistency.
- Add 1/2 cup of slivered almonds and stir until combined.
- Taste and adjust seasoning, if necessary.
- Serve the soup in small shot glasses and garnish with additional slivered almonds.
