- In a medium saucepan over low heat, melt 1/2 cup of ghee until just melted
- Add 1/2 cup of neem leaves and 1/2 cup of dates to the melted ghee and stir until the ingredients are well combined.
- Increase the heat to medium-high and continue to stir the mixture until it thickens and becomes a paste
- Remove the pan from heat and set aside.
- In a medium bowl, combine 1 cup of almond flour, 1/2 teaspoon of cardamom powder, and 1/2 teaspoon of sea salt
- Add the neem-date paste to the dry ingredients and stir until a firm dough forms
- Transfer the dough to the parchment paper-lined baking pan and use your hands to press the dough into an even layer
- Bake the fudge for 20-25 minutes or until golden-brown and fragrant
- Remove from oven and let cool for at least 30 minutes before slicing into 16 squares
- Enjoy the sweet neem & date fudge squares, made with love and mindfulness.
