Ingredients
- 1 cup of dried chickpeas, soaked overnight
- 3 cups of fresh water
- 1 cucumber, thinly sliced
- 1 onion, thinly sliced
- 1 bunch of fresh mint, chopped
- 1 tablespoon of extra-virgin olive oil
- Pinch of sea salt
- Pinch of freshly ground black pepper
- 1 flatbread wrap
Instructions
- Begin by soaking a cup of chickpeas overnight in cold water
- The next day, drain the chickpeas and rinse with fresh water
- In a medium saucepan, bring the chickpeas and three cups of water to a boil over high heat
- Reduce the heat to low and simmer the chickpeas for 40 minutes, or until they are tender
- Thinly slice one cucumber and one onion and set aside
- Chop one bunch of fresh mint and set aside
- In a large bowl, combine the cooked chickpeas with the cucumber, onion, and mint
- Add a tablespoon of olive oil and a pinch of salt and pepper
- Heat a large skillet over medium heat
- Spread the mixture over the skillet and cook until crispy and golden, stirring occasionally
- Place the wrap mixture on a flatbread, wrap tightly, and enjoy!
