  • Add 1 cup of diced onion and 1 teaspoon of minced garlic to the skillet and cook until the onions are softened and lightly golden, about 3-5 minutes.
  • Add 1 cup of red lentils to the skillet and cook for an additional 2 minutes, stirring occasionally.
  • Pour in 4 cups of vegetable stock and 1 cup of diced tomatoes
  • Add 1 cup of chopped kale and cook until the kale is softened and the lentils are cooked through, about 2 minutes.
  • Season with 1 teaspoon of sea salt and ½ teaspoon of black pepper.
  • Transfer the lentil and kale mixture to a 9x13-inch baking dish.
  • In a medium bowl, combine 1 cup of cooked quinoa, ½ cup of toasted slivered almonds, and ½ cup of crumbled feta cheese.
  • Sprinkle the quinoa mixture over the lentil and kale mixture.
  • Bake for 15 minutes until the top is golden and bubbly.
  • Remove from the oven and let cool for 10 minutes before serving.
