- 1 red bell pepper, cored, seeded, and thinly sliced
- 1 apple, peeled, cored, and cubed
- 1 zucchini, thinly sliced
- 1 summer squash, thinly sliced
- 2 tablespoons of extra-virgin olive oil
- Sea salt and freshly ground black pepper, to taste
Instructions
- Begin by preparing the farro according to the package instructions
- While the farro is cooking, prepare the vegetables
- Peel, core, and cut the apple into small cubes.
- Slice the zucchini and squash into thin slices
- Heat a large skillet over medium heat
- Add the apple, zucchini, and squash to the pan
- When the farro is done cooking, add it to the pan with the vegetables
