  • 8 ounces Regal Rice Noodles
  • 1 tablespoon vegetable oil
  • 2 stalks lemongrass, minced
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 teaspoons brown sugar
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  • Bring a large pot of water to a rolling boil and add the rice noodles
  • Meanwhile, in a separate pot, heat 1 tablespoon of oil over medium-high heat
  • Add the vegetable broth, soy sauce, and brown sugar
  • Remove from heat and strain the broth into a large bowl
  • Add the cooked noodles to the broth and stir to combine.
  • Taste and adjust seasoning with additional soy sauce or salt, if desired.
  • Serve in individual bowls and garnish with fresh cilantro, if desired.
