- 2 cups dry spelt
- 2 tablespoons olive oil
- 4 cups water
- 4 cups fresh spinach, washed
- 1/2 cup crumbled feta cheese
- 1 cup diced tomatoes
- 1/4 cup chopped nuts
- Sea salt and freshly ground pepper, to taste
Instructions
- The next day, drain and rinse the spelt
- Once the spelt is cooked, strain it in a fine mesh sieve and rinse with cold water
- While the spelt is cooking, heat a large skillet over medium heat
- To assemble the bowl, divide the cooked spelt evenly among four bowls
- Garnish with your choice of flavorful ingredients, such as crumbled feta cheese, diced tomatoes, and chopped nuts.
