Ingredients
- 1 tablespoon olive oil
- 1 cup short-grain brown rice
- 2 cups vegetable broth
- 1 bunch of broccolini, trimmed and cut into 1-inch pieces
- Sea salt and freshly ground black pepper, to taste
Instructions
- Begin by heating a large skillet over medium-high heat
- Add 1 cup of short-grain brown rice to the skillet and cook for 3 minutes, stirring occasionally
- Meanwhile, trim the stalks of 1 bunch of broccolini and discard
- Once the rice is done, add the broccolini to the skillet and stir to combine
- Remove the skillet from the heat and season with salt and pepper to taste.
- Serve the Brilliant Brown Rice and Broccolini Beacon Bowl warm and enjoy the nourishment of nature's bounty.
