- 2 large turnips
- 1 tablespoon olive oil
- 6 cups vegetable broth
- ½ cup white wine
- 1 teaspoon tarragon
- Sea salt, to taste
- Extra tarragon and olive oil, for garnish
Instructions
- Begin by carefully washing and peeling your turnips
- Cut the turnips into small cubes and place them in a large pot with enough room for all the ingredients.
- Saute the turnips in a tablespoon of olive oil on medium-high heat for three to five minutes, stirring occasionally.
- Add 6 cups of vegetable broth and bring to a boil.
- Reduce the heat to medium-low and simmer for 20 minutes, stirring occasionally.
- Add in ½ cup of white wine, 1 teaspoon of tarragon, and a pinch of salt.
- Simmer for an additional 10 minutes, stirring occasionally.
- Remove from heat and let cool for 10 minutes.
- Use an immersion blender to puree the soup until smooth.
- Return to heat and simmer for an additional 5 minutes.
- Taste and adjust seasoning, if necessary.
- Serve with a sprinkle of tarragon and a drizzle of olive oil.
