Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, diced
- 1 cup long-grain white rice
- 4 cups vegetable broth
- 1 bunch rainbow chard, stems and leaves separated
- Sea salt and freshly ground black pepper, to taste
Instructions
- Begin by heating a large pot over medium-high heat
- Next, add 1 cup of long grain white rice and stir to combine
- Bring the mixture to a boil, then reduce heat to medium-low and let simmer for 15 minutes.
- In the meantime, rinse 1 bunch of rainbow chard and remove the stems
- Add the chopped chard stems to the pot and simmer for an additional 5 minutes.
- Finally, add the chard leaves and cook for 3-4 minutes or until the leaves are wilted.
- Season the soup with sea salt and freshly ground black pepper to taste.
- Serve the soup warm and enjoy the vibrant colors and flavors of nature.
