Ingredients
- 2 cups of all-purpose flour, freshly milled
- 1 teaspoon of baking soda
- 1 teaspoon of ground cardamom, freshly ground
- Pinch of sea salt, freshly ground
- 1/2 cup of vegan butter, melted
- 1/2 cup of raw honey
- 2/3 cup of coconut milk
- 1 teaspoon of vanilla extract, organic
- 2 teaspoons of elaichi powder, freshly ground
- 1/2 cup of chopped walnuts, organic
- 1/2 cup of raisins, organic
- Lightly greased muffin tins, organic
Instructions
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cardamom, and a pinch of sea salt.
- Add 2/3 cup of coconut milk, 1 teaspoon of vanilla extract, and 2 teaspoons of elaichi powder to the butter and honey mixture.
- Slowly incorporate the dry ingredients into the wet and mix until just combined.
- Gently fold in 1/2 cup of chopped walnuts and 1/2 cup of raisins.
- Divide the batter evenly among 12 lightly greased muffin tins.
- Bake for 15-20 minutes until golden brown.
- Allow the muffins to cool for 10 minutes before serving.
