Ingredients

  • 2 cups of all-purpose flour, freshly milled
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground cardamom, freshly ground
  • Pinch of sea salt, freshly ground
  • 1/2 cup of vegan butter, melted
  • 1/2 cup of raw honey
  • 2/3 cup of coconut milk
  • 1 teaspoon of vanilla extract, organic
  • 2 teaspoons of elaichi powder, freshly ground
  • 1/2 cup of chopped walnuts, organic
  • 1/2 cup of raisins, organic
  • Lightly greased muffin tins, organic

Instructions

  • In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cardamom, and a pinch of sea salt.
  • In a separate bowl, use a hand mixer to beat together 1/2 cup of melted vegan butter and 1/2 cup of raw honey.
  • Add 2/3 cup of coconut milk, 1 teaspoon of vanilla extract, and 2 teaspoons of elaichi powder to the butter and honey mixture.
  • Slowly incorporate the dry ingredients into the wet and mix until just combined.
  • Gently fold in 1/2 cup of chopped walnuts and 1/2 cup of raisins.
  • Divide the batter evenly among 12 lightly greased muffin tins.
  • Bake for 15-20 minutes until golden brown.
  • Allow the muffins to cool for 10 minutes before serving.
