- 1 teaspoon of coriander seeds
- 1 teaspoon of fenugreek seeds
- 2 tablespoons of extra-virgin olive oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of sea salt
- 1 pinch of asafoetida powder
Instructions
- Begin by gathering your ingredients: one cup of Bajra (pearl millet), one butternut, one teaspoon of cumin seeds, one teaspoon of coriander seeds, one teaspoon of fenugreek seeds, two tablespoons of vegetable oil, one teaspoon of mustard seeds, one teaspoon of salt, and one pinch of asafoetida
- Toast the cumin, coriander, and fenugreek seeds in a dry skillet over medium heat for one to two minutes, stirring frequently
- Peel the butternut and cut it into 1-inch cubes.
- Heat the oil in a large skillet over medium-high heat
- Add the cubed butternut and sauté for four to five minutes, stirring occasionally.
- Add the Bajra and the toasted spices and continue cooking for five to seven minutes, stirring occasionally.
- Add the salt and asafoetida and cook for one additional minute.
- Remove the skillet from the heat and transfer the bhajis to a plate.
- Enjoy the blissful butternut bhajis, relishing in the harmony of the earth's bounty.
