  • Begin by preheating the oven to 375°F.
  • In a medium bowl, mix together 2 cups of amaranth flour, 1 teaspoon of baking soda, 1 teaspoon of sea salt, and 1 teaspoon of ground cinnamon.
  • In a separate bowl, cream together ½ cup of vegan butter and 1 cup of coconut sugar until light and fluffy.

  • Reduce the heat to low, and simmer for 10 minutes, or until the apples are soft and the mixture is thick.
  • Remove the apple butter from the heat, and blend it with an immersion blender until it is smooth.
