- 2 cups amaranth flour
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 teaspoon ground cinnamon
- ½ cup vegan butter
- 1 cup coconut sugar
- 2 tablespoons apple cider vinegar
- 1 teaspoon vanilla extract
- 2 cups peeled and chopped apple
- ½ cup apple cider
- ¼ cup maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- Begin by preheating the oven to 375°F.
- In a separate bowl, cream together ½ cup of vegan butter and 1 cup of coconut sugar until light and fluffy.
- Add 2 tablespoons of apple cider vinegar and 1 teaspoon of vanilla extract to the butter-sugar mix, and mix until combined.
- Gradually add the dry mixture to the wet mixture, stirring constantly until a soft dough forms.
- On a lightly floured surface, roll the dough out until it is about ½ inch thick.
- Using a biscuit cutter, cut out circles of dough, and place them on a lightly greased baking sheet.
- Bake for 10-12 minutes, or until the biscuits are lightly golden.
- In a medium saucepan, add 2 cups of peeled and chopped apple, 1/2 cup of apple cider, 1/4 cup of maple syrup, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg.
- Heat the mixture over medium-high heat until it comes to a boil, stirring occasionally.
- Reduce the heat to low, and simmer for 10 minutes, or until the apples are soft and the mixture is thick.
- Remove the apple butter from the heat, and blend it with an immersion blender until it is smooth.
- Serve the biscuits warm with the apple butter, and enjoy!
