- 1 lb. celeriac
- 2 tablespoons butter
- Salt & pepper to taste
- 2 tablespoons chopped chives
- Extra virgin olive oil, for serving

Instructions
- Peel and dice the potatoes and celeriac into 1 inch cubes.
- Place the potatoes and celeriac in a medium pot and cover with cold water.
- Bring the pot to a low simmer and cook for approximately 25 minutes, or until the potatoes and celeriac are fork tender.
- Drain the potatoes and celeriac and add them back into the pot.
- Using a potato masher, gently mash the potatoes and celeriac until they are creamy.
- Add in the butter and season with salt and pepper to taste.
- Gently fold in the chopped chives.
- Serve hot with a drizzle of olive oil and a sprinkle of fresh parsley.
