- Cut the squash into 1-inch cubes and toss with olive oil, salt, and pepper.
- Spread the squash cubes on a baking sheet and roast in the preheated oven for 25-30 minutes, stirring occasionally until lightly browned and tender.
- Meanwhile, bring 2 cups of water to a boil in a medium saucepan over high heat.
- Once boiling, add 1 cup of long grain white rice and reduce the heat to low.
- Simmer for 15-20 minutes, stirring occasionally until the water is absorbed and the rice is cooked.
- When the squash is done, add it to the cooked rice and mix together.
- Serve while still warm, garnished with freshly chopped herbs if desired.
