Ingredients
- 1 lb organic carrots, trimmed, peeled, and finely chopped
- 1 inch fresh ginger root, peeled and finely grated
- 1 teaspoon of extra virgin olive oil
- 2 cups of vegetable broth
- 1 teaspoon of sea salt
- 1 teaspoon of freshly ground black pepper
- 2 tablespoons of organic honey or maple syrup
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cloves
- 1 tablespoon of freshly squeezed lemon juice
- 2 tablespoons of freshly chopped parsley, for garnish
Instructions
- Add the grated ginger and stir for a few seconds.
- Peel and dice the carrots and add them to the pot
- Pour in the broth and bring to a boil
- Once the carrots are tender, transfer the soup to a blender and blend until smooth
- Taste and adjust the seasoning
- Serve in individual bowls and garnish with a pinch of chopped parsley or chives.
