Instructions
- Begin by gathering all of the necessary ingredients: 2 cups of diced carrots, 1 cup of diced celery, 1 cup of diced onion, 1 cup of pearl barley, 2 cloves of garlic, 6 tablespoons of olive oil, 10 cups of vegetable broth, 1 teaspoon of chopped fresh thyme, 1 teaspoon of chopped fresh parsley, and salt and pepper to taste.
- Heat the olive oil in a large pot over medium heat.
- Add the garlic and cook, stirring constantly, for 1 minute.
- Add the pearl barley and stir to coat.
- Pour in the vegetable broth and stir to combine.
- Bring the soup to a boil, reduce the heat to low, and cover the pot
- Add the thyme, parsley, and salt and pepper to the soup.
- Remove the pot from the heat and let the soup cool for 5 minutes.
