Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- 8 cups baby spinach leaves
- 2 pounds Yukon gold potatoes, peeled and cut into 1/2-inch cubes
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese, divided
- 1 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375°F.
- Fill a pot with lightly salted water and bring to a boil
- Drain potatoes and set aside.
- In a large skillet, heat 1 tablespoon of oil over medium-high heat
- Add spinach and cook until wilted, about 4-5 minutes.
- Place potatoes in a 9x13 inch baking dish.
- Top with spinach and garlic.
- Pour cream mixture over potatoes and spinach.
- Sprinkle with remaining Parmesan.
- Bake for 25 minutes or until top is golden brown.
- Let cool for 5 minutes before serving
