- 1 head of cauliflower, cut into florets
- 4 tablespoons of extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
- 1 cup of gaba rice
- 1 cup of vegetable broth
- 1 cup of fresh or frozen green peas
- Chopped fresh parsley, for garnish
Instructions
- Preheat oven to 375°F.
- Spread the cauliflower florets in a single layer on a parchment-lined baking sheet
- Transfer the roasted cauliflower to a large bowl and set aside.
- In a medium pot, heat 2 tablespoons of olive oil over medium heat
- Add 1 cup of vegetable stock and bring to a boil
- Add the cooked gaba rice and 1 cup of frozen peas to the roasted cauliflower and mix to combine.
- Transfer the pilaf to a serving dish and garnish with freshly chopped parsley.
- Enjoy this nourishing and soul-satisfying pilaf as a light meal or side dish.
