Ingredients
- 1 cup basmati rice, soaked
- 2 ½ cups of water
- 2 tablespoons of vegetable oil
- 2 teaspoons of curry powder
- 1 can of chickpeas, drained
- 2 tablespoons of coconut cream
- 2 tablespoons of fresh cilantro, chopped
- 1 teaspoon of sea salt
- 1 teaspoon of black pepper
- 1 teaspoon of ground turmeric
- 1 teaspoon of ground cumin
- 1 teaspoon of ground ginger
- 1 teaspoon of ground coriander
- 1 teaspoon of garam masala
Instructions
- Begin by soaking the basmati rice for 30 minutes in a bowl of cold water.
- Drain the rice and rinse it thoroughly.
- Place the rinsed rice in a pot and add 2 ½ cups of water.
- Bring the pot to a boil, reduce the heat to low, and simmer for 15 minutes.
- Meanwhile, heat 2 tablespoons of vegetable oil in a separate pan over medium heat.
- Add the curry powder and stir for 30 seconds.
- Add the chickpeas, stirring to coat them in the curry powder.
- Cook for five minutes, stirring occasionally.
- Once the rice is done, add it to the pan with the chickpeas and stir to combine.
- Simmer for 5 minutes, stirring occasionally.
- Remove the pan from heat and serve the Gaba Rice with Curried Chickpeas.
