Ingredients
- • 4 cups of fresh, ripe figs, preferably from a local farm
- • 2 tablespoons of unsalted, grass-fed butter
- • 1/2 cup of light brown coconut sugar
- • 1 teaspoon of Himalayan pink salt
- • 2 cups of organic coconut milk
- • 2 tablespoons of arrowroot powder
- • 2 teaspoons of pure vanilla extract
Instructions
- Cut the figs into quarters and set aside
- In a medium-sized saucepan, melt the butter over medium heat
- Add the figs to the pan and reduce the heat to low
- Once the figs start to soften, turn off the heat and transfer the mixture to a bowl
- In a separate bowl, prepare your favorite ice cream base according to the recipe instructions
- Once the base is ready, fold in the cooled caramelized figs until they are evenly distributed
- Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving
