- 1 cup powdered coconut sugar
- 2 tablespoons almond milk or cow's milk
- 1/2 teaspoon vanilla extract
Additional:
- Small round orange candies for the flower center
Instructions
Prepare the Pancake Batter:
- In a large bowl, whisk together spelt flour, baking powder, and salt.
- Gradually mix the wet ingredients into the dry until smooth. Transfer the batter to squeeze bottles.
Cook the Pancakes with Embossing Technique:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with ghee.
- To create the embossed effect, start by squeezing a thin outline of the batter onto the skillet to form petal and leaf shapes. Let it cook slightly until it sets. Use thinner tipped bottles to achieve finer details.
- Quickly fill in the rest of the pancake shape with more batter, going over the initial design. This will create a two-toned, embossed look as the first part of the batter will cook longer and appear darker.
Flip and Finish Cooking:
- Once bubbles form on the surface of the pancake, carefully flip it over and cook until the other side is golden brown.
Make the Icing Flower:
- Combine powdered coconut sugar with almond milk and vanilla extract to a smooth consistency. Use a piping bag to pipe small flowers onto each pancake.
Assemble and Garnish:
- Stack the pancakes, showcasing the embossed designs.
- Place a small orange candy in the center of each icing flower for an added visual element.
