For the Muffin Batter:
- 2 cups spelt flour or whole wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp Himalayan pink salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/3 cup ghee melted
- 1/2 cup maple syrup
- 1 large organic egg
- 1 tsp pure vanilla extract
- 1/2 cup grass-fed milk or almond milk
- 1 1/2 cups diced apples peeled
For the Crumble Topping:
- 1/2 cup spelt flour or whole wheat pastry flour
- 1/4 cup coconut sugar
- 1/2 tsp ground cinnamon
- 1/4 cup ghee cold and cubed
- 1/4 cup chopped walnuts or almonds optional
Instructions
Prepare the Crumble Topping:
- In a bowl, combine the flour, coconut sugar, and cinnamon.
- Add the cold cubed ghee and use your fingers to mix until it resembles coarse crumbs. Stir in the nuts if using. Set aside.
Muffin Batter:
- Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the melted ghee, maple syrup, egg, and vanilla extract. Mix in the milk.
- Fold the wet ingredients into the dry ingredients until just combined. Gently fold in the diced apples.
Assemble the Muffins:
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Generously sprinkle the crumble topping over each muffin.
Bake:
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes, then move them to a wire rack to cool completely.
