  • 1/4 cup black sesame paste tahini
  • 1/4 cup grass-fed milk or almond milk
  • 1 large organic egg
  • 1 tsp black sesame seeds plus extra for sprinkling

Black Sesame Layer:

  • Toast black sesame seeds in a dry skillet until fragrant. Allow to cool.
  • Mix flour and baking powder in a bowl.
  • In a separate bowl, whisk together melted ghee, coconut sugar, black sesame paste, milk, and egg.
  • Combine the wet and dry ingredients until just incorporated.

Matcha Layer:

  • In a new bowl, whisk together flour, baking powder, and matcha powder.
  • In another bowl, mix melted ghee, maple syrup, milk, and egg.
  • Combine wet and dry ingredients until just mixed.

Assemble the Muffins:

  • Preheat the oven to 350°F (175°C) and line the muffin tin with liners.
  • Fill each liner with a layer of black sesame batter, then top with matcha batter.
  • Use a toothpick to swirl the layers together slightly for a marbled effect.

Bake:

  • Bake for 20-25 minutes or until a toothpick comes out clean.
  • Cool the muffins on a wire rack.

Creamy White Frosting:

  • Beat cream cheese, maple syrup, and vanilla extract with an electric mixer until smooth.
  • Once muffins are cool, spread or pipe the frosting onto each muffin.
  • Sprinkle with additional black sesame seeds.
