- 1 cup millet
- 2 1/2 cups water
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground clove
- 1/4 teaspoon ground cumin
- 2 tablespoons honey or adjust to desired sweetness
- 2 tablespoons unsalted butter
Instructions
- Begin by heating a large saucepan over medium heat.
- Add the pine nuts to the pan and toast for 3-4 minutes, stirring often.
- Add the millet and stir together with the pine nuts.
- Pour in the water and bring to a boil.
- Once boiling, reduce the heat to low and cover the saucepan.
- Simmer for 12-15 minutes or until the millet is cooked through.
- Taste and adjust the seasoning, if desired.
- Serve the spiced pine nut and millet pudding warm.
