- Organic, Medjool dates, soaked overnight in warm water
- Organic, unsweetened almond milk
- Organic, gluten-free cornstarch
- Organic, toasted almonds
- Seasonal fruits and herbs (optional)
Instructions
- In a saucepan, bring 1 cup of almond milk to a low simmer.
- In a separate bowl, mix 1/4 cup of cornstarch with 1/4 cup of cold almond milk until fully dissolved.
- Add the cornstarch mixture to the simmering almond milk, stirring constantly with a whisk.
- Cook until the mixture thickens, about 4-5 minutes.
- Remove from heat and let cool.
- Drain the dates and place in a food processor or blender.
- Pour the cooled almond milk mixture into the food processor or blender and blend until fully combined.
- Pour the mousse mixture into individual jars or serving dishes.
- Top with toasted almonds and enjoy.
