Instructions
Preheat and Prepare:
- Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
Make the Spelt Flour Base:
- In a bowl, mix together spelt flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of sea salt until well combined.
- Press this mixture into the bottom of the prepared tray, creating a firm, even layer.
- Bake for 10-12 minutes or until lightly golden. Let it cool.
Prepare the Coconut Layer:
- In a separate bowl, combine shredded coconut, coconut sugar, honey, coconut oil, and vanilla extract. Mix until well combined.
- Spread this mixture over the cooled base. Press down firmly.
Chocolate Coating:
- Melt dark chocolate and coconut oil together until smooth. You can use a double boiler or microwave for this.
- Pour the melted chocolate over the coconut and almond layers, spreading evenly.
Chill:
- Refrigerate for at least 1 hour, or until the chocolate sets.
Final Touch:
- Once set, cut into bite-sized squares.
- For an added touch of sweetness, lightly drizzle with maple powdered sugar or date syrup.
