- Add a ¼ cup of chopped fresh mint leaves to the bowl and stir to combine.
- In a small saucepan, heat ¼ cup of olive oil over medium heat until shimmering.
- Add the amla and mint mixture to the saucepan and sauté for 2 minutes, stirring often.
- Remove the saucepan from the heat and allow the mixture to cool to room temperature.
- Preheat your oven to 350°F.
- Place a sheet of store-bought puff pastry on a lightly floured surface and roll it out to a ¼ inch thickness.
- Spread the cooled amla and mint mixture over the pastry, leaving a 1-inch border around the edges.
- Roll the pastry up into a cylinder and secure the edges.
- Cut the pastry into ¼ inch thick slices and place them on a parchment-lined baking sheet.
- Bake the pinwheels for 15 minutes or until golden brown.
