  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup butter
  • 1 cup sugar
  • 3 medium apples, peeled and cored
  • 1 teaspoon pure vanilla extract

Instructions

  • Preheat the oven to 350°F
  • In a separate bowl, mix together 1 ½ cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt.
  • In a medium saucepan, melt 1 cup butter over low-medium heat
  • Pour the melted butter mixture over the eggs in the large bowl and mix until just combined.
  • Add the flour mixture to the egg mixture and stir until just incorporated.
  • Peel and core 3 medium apples and dice them into small cubes
  • Add the apples and 1 teaspoon of pure vanilla extract to the cake batter and stir until just combined.
  • Grease a 9-inch round cake pan and pour the cake batter into it.
  • Bake the cake in the preheated oven for 40-45 minutes until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan before serving
