- 1 cup millet
- 2 cups vegetable broth
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Pinch of sea salt
- 1/2 cup cooked millet
- 1/2 cup almond meal
- 1 tablespoon maple syrup
- 2 tablespoons melted coconut oil
- Freshly ground black pepper, to serve
- Seasonal fruits and vegetables, to garnish (optional)
Instructions
- In a medium bowl, combine 1 cup millet, 2 cups vegetable broth, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and a pinch of sea salt.
- Cover the bowl and cook in the oven for 45 minutes, or until the millet is tender.
- Remove from the oven and let cool.
- In a separate bowl, mix together 1/2 cup cooked millet, 1/2 cup almond meal, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1 tablespoon maple syrup, and 2 tablespoons melted coconut oil.
- With clean hands, form the mixture into 8 patties.
- Place the patties on a lightly greased baking sheet.
- Bake for 15-20 minutes, or until golden brown.
- Serve warm with a sprinkle of sea salt and freshly ground black pepper
