Ingredients

  • 1 cup millet
  • 2 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of sea salt
  • 1/2 cup cooked millet
  • 1/2 cup almond meal
  • 1 tablespoon maple syrup
  • 2 tablespoons melted coconut oil
  • Freshly ground black pepper, to serve
  • Seasonal fruits and vegetables, to garnish (optional)

Instructions

  • In a medium bowl, combine 1 cup millet, 2 cups vegetable broth, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and a pinch of sea salt.
  • Cover the bowl and cook in the oven for 45 minutes, or until the millet is tender.
  • Remove from the oven and let cool.
  • In a separate bowl, mix together 1/2 cup cooked millet, 1/2 cup almond meal, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1 tablespoon maple syrup, and 2 tablespoons melted coconut oil.
  • With clean hands, form the mixture into 8 patties.
  • Place the patties on a lightly greased baking sheet.
  • Bake for 15-20 minutes, or until golden brown.
