For the Muffin Batter:
- 2 cups spelt flour or whole wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp Himalayan pink salt
- 1 tsp ground cardamom
- 1/3 cup ghee melted
- 1/2 cup maple syrup
- 1 large organic egg
- 1 tsp pure vanilla extract
- 1/2 cup grass-fed milk or almond milk
- 1 1/2 cups diced apples peeled and cored
For the Topping:
- Sliced almonds for sprinkling
- A dusting of powdered maple sugar
- Optional: A pinch of ground cinnamon for extra spice
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix the dry ingredients together in a bowl: flour, baking powder, baking soda, salt, and cardamom.
- Combine the wet ingredients in a separate bowl: melted ghee, maple syrup, egg, and vanilla extract. Mix in the milk.
- Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
- Gently fold in the diced apples into the batter.
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Cool the muffins on a wire rack. Once cool, dust them lightly with powdered maple sugar.
