Instructions

  • Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Mix the dry ingredients together in a bowl: flour, baking powder, baking soda, salt, and cardamom.
  • Combine the wet ingredients in a separate bowl: melted ghee, maple syrup, egg, and vanilla extract. Mix in the milk.
  • Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  • Gently fold in the diced apples into the batter.
  • Spoon the batter into the muffin cups, filling each about two-thirds full.
  • Sprinkle the top of each muffin with sliced almonds and, if desired, a pinch of ground cinnamon.
  • Bake for 18-22 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
  • Cool the muffins on a wire rack. Once cool, dust them lightly with powdered maple sugar.
