Ingredients

  • For the Baked French Toast:
  • 4 large ripe pears, peeled and thinly sliced
  • 4 large free-range eggs
  • 1 1/4 cups heavy cream or full-fat coconut milk for a sattvic option
  • 3 tablespoons pure maple syrup
  • 1 1/2 teaspoons ground cardamom
  • 3 tablespoons unsalted butter or ghee
  • 3 tablespoons coconut sugar or brown sugar
  • Crème fraîche optional and a sprinkle of cinnamon for garnish
  • For the Pear Sauce:
  • 2 ripe pears peeled and chopped
  • 1/4 cup water
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • A pinch of ground cardamom

Instructions

  • Preheat the Oven and Prepare the Baking Dish:
  • Preheat your oven to 350°F (180°C). Grease a 9x13 inch (23x33 cm) baking dish with butter or ghee.
  • Prepare the French Toast Mixture:
  • In a bowl, whisk together the eggs, cream or coconut milk, maple syrup, and ground cardamom until well combined.
  • Assemble the French Toast:
  • Arrange half of the thinly sliced pears in an even layer at the bottom of the baking dish.
  • Pour the egg mixture over the pears, ensuring even coverage.
  • Gently layer the remaining pear slices on top.
  • Evenly sprinkle coconut sugar or brown sugar over the top.
  • Bake:
  • Bake in the preheated oven for 40-45 minutes, until the top is golden brown and the custard is set.
  • Prepare the Pear Sauce:
  • In a saucepan, combine the chopped pears, water, maple syrup, vanilla extract, and a pinch of cardamom.
  • Simmer over medium heat until the pears are soft and the sauce has thickened slightly, about 15-20 minutes.
  • Puree the sauce using a blender or immersion blender for a smoother texture.
  • Serve:
  • Allow the baked French toast to cool slightly. Serve warm with a dollop of crème fraîche (optional), a drizzle of the homemade pear sauce, and a sprinkle of cinnamon.
  • Garnish:
  • Garnish with additional fresh pear slices or a sprinkle of cardamom for added elegance.
