- Preheat your oven to 375°F (190°C).
- Slice the eggplant into 1/2-inch (1 cm) thick rounds and lay them on a baking sheet.
- Bake the eggplant for about 15 minutes until lightly golden.
- While the eggplant is baking, prepare the tomato sauce
- Add the diced onion and cook until softened, about 5 minutes.
- Add the garlic and cook for another minute.
- Add the diced tomatoes, tomato paste, and seasonings
- Remove the eggplants from the oven and top each round with the tomato sauce.
- Bake the eggplant and tomato sauce for an additional 15 minutes until the eggplant is tender and the sauce is bubbling.
- Serve the eggplant with a sprinkle of fresh oregano and a slice of lemon.
