Ingredients
- 4 large artichokes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup minced fresh parsley
- 1/4 cup minced fresh basil
- 1/4 cup minced fresh oregano
- 1 teaspoon lemon zest
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup toasted pine nuts
- Salt and freshly ground pepper, to taste
Instructions
- Preheat your oven to 375°F.
- Wash and dry your artichokes, then use kitchen shears to trim off the stem and the top third of the artichoke leaves.
- Cut the artichokes in half lengthwise, and scoop out and discard any furry bits from the center.
- In a medium bowl, combine your stuffing ingredients, mixing them together until they are well blended.
- Place the artichoke halves in a baking dish and spoon the stuffing into the center of each artichoke half.
- Sprinkle with additional seasoning, if desired.
- Bake the artichokes in the preheated oven for 30-35 minutes, or until the artichokes are tender and the stuffing is lightly browned.
