Ingredients

  • Mixed berries strawberries, blueberries, raspberries , approximately 2 cups
  • 2 tablespoons chopped - Fresh mint leaves
  • 2 tablespoons - High-quality balsamic vinegar
  • 1 tablespoon plus extra if needed for sweetness adjustment - Pure maple syrup
  • Fine sea salt, a pinch
  • 1 tablespoon melted - Ghee clarified butter or coconut oil

Instructions

  • Select the freshest berries available for your salsa – a combination of strawberries, blueberries, and raspberries is ideal. You will need approximately two cups of mixed berries.
  • Wash the berries gently under cold running water to remove any dirt or debris, and then carefully pat them dry with a clean kitchen towel.
  • Hull the strawberries and cut them into small, uniform dices, approximately ¼ inch in size. For consistency, do the same with the blueberries and raspberries if they are significantly larger. Aim to have similar-sized pieces to ensure a harmonious blend of flavors and textures in each bite.
  • In a small, non-reactive bowl, combine the diced berries together using a silicone or wooden spoon to prevent bruising the delicate fruit.
  • Finely chop fresh mint leaves and fold them into the mixed berries, adding a refreshing, aromatic element to the salsa. Use approximately two tablespoons of chopped mint for balance.
  • For the dressing, whisk together two tablespoons of high-quality balsamic vinegar, one tablespoon of pure maple syrup, a pinch of fine sea salt, and one tablespoon of melted ghee or coconut oil in a separate bowl until the ingredients are well emulsified.
  • Gently pour the balsamic dressing over the mixed berries, using the silicone or wooden spoon to combine the ingredients with care so as to not crush the berries.
  • Let the mixture sit and marinate for at least 15 minutes at room temperature to amalgamate the flavors. The acid in the balsamic vinegar will slightly macerate the berries, intensifying their sweetness and the overall flavor profile of the salsa.
  • Taste and adjust the seasoning of the salsa if necessary. If more sweetness is desired, add a small amount of maple syrup, being mindful not to overpower the natural flavors of the fruit.
