- 3 cups freshly cooked Basmati rice
- 1 cup freshly cooked broccoli
- 1 cup freshly diced red onion
- 1/4 cup extra-virgin olive oil
- 2 cloves of fresh garlic, minced
- 2 teaspoons of organic dried oregano
- 1 teaspoon of organic dried basil
- 1 teaspoon of Himalayan sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons of freshly chopped parsley
- 1/2 cup freshly shredded mozzarella cheese
- 1/2 cup freshly shredded cheddar cheese
- 2 tablespoons of organic poppy seeds
Instructions
- Preheat the oven to 375°F.
- In a medium bowl, combine the cooked basmati rice, cooked broccoli, red onion, olive oil, garlic, oregano, basil, salt, and black pepper
- Grease a large baking sheet with cooking spray.
- Place the mixture on the baking sheet and spread it out evenly.
- Sprinkle the Parmesan cheese, parsley, mozzarella, and cheddar cheese over the top.
- Sprinkle the poppy seeds over the top.
- Bake for 15 minutes, or until cheese is melted and bubbly.
