Ingredients
- 1 cup cooked basmati rice
- 1/2 cup store-bought roasted red peppers, diced
- 1/2 cup fresh mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon garlic powder
- Sea salt & freshly ground black pepper, to taste
Instructions
- Preheat oven to 425°F and lightly grease a baking sheet.
- In a medium bowl, mix together 1 cup of cooked rice, 1/2 cup of store-bought roasted red peppers, 1/2 cup of shredded mozzarella cheese, 1/4 cup of chopped fresh basil, 2 tablespoons of olive oil, and 1/2 teaspoon of garlic powder.
- Scoop out 1-inch balls of the mixture and place them on the baking sheet.
- Bake for 15 minutes or until the edges of the bites are golden brown.
- Serve warm and enjoy!
