- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
Instructions
Prepare the Pizza Dough:
- In a bowl, dissolve the yeast in warm water with agave syrup. Let it sit for 5 minutes until frothy.
- In another bowl, combine ground kasha, spelt flour, and salt.
- Gradually mix in the yeast mixture and olive oil into the dry ingredients until a dough forms.
- Knead the dough on a floured surface for about 5 minutes. Let it rest in a greased bowl, covered, for 1 hour or until doubled in size.
Preheat the Oven:
- Preheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to preheat as well.
Shape the Pizza:
- Roll out the dough on a floured surface to a 12-inch circle. Place it on a piece of parchment paper for easy transfer.
Prepare the Topping:
- Mix honey and lemon juice in a bowl. Toss the kiwi, strawberries, kumquats, and blueberries in this glaze.
- Arrange the glazed fruits on the pizza base in a kaleidoscopic pattern, starting from the center and working your way out. The key is to create a visually appealing, symmetrical pattern.
Bake the Pizza:
- Slide the pizza (with parchment) onto the preheated pizza stone or a baking sheet.
- Bake for 15-20 minutes or until the crust is golden and the fruit is just tender.
Garnish and Serve:
- Garnish with fresh mint leaves for a refreshing contrast.
- Slice and serve immediately, offering an immersive and mindful eating experience.
