- Rinse 1 cup of black rice and place it in a medium pot
- In a large bowl, mix together 1 large sweet potato, 1 large carrot, and 1 large turnip, all peeled and chopped into 1-inch cubes
- Spread the vegetables out on a sheet pan and roast for 25 minutes or until golden brown and tender.
- Drain the cooked black rice and fluff with a fork
