Ingredients
- 2 cups unsalted butter room temperature, divided
- 1 1/2 cups fresh blueberries divided
- Zest of 3 lemons divided
- 3 tablespoons fresh thyme leaves divided
- 4-5 tablespoons honey divided, or to taste
- A pinch of salt divided
Instructions
For the Lighter Butter:
- In a food processor, blend 1 cup of butter with 1/2 cup of blueberries, the zest of 1 lemon, 1 tablespoon of thyme leaves, 2 tablespoons of honey, and a pinch of salt until the mixture is smooth and has a light purple color.
- Taste and add more honey if a sweeter flavor is desired.
- Transfer the mixture onto a piece of parchment paper and form into a log. Chill in the refrigerator until firm.
For the Darker Butter:
- In a saucepan, cook the remaining 1 cup of blueberries over medium heat until they start to burst and release their juices, about 5 minutes. Let cool slightly.
- In a food processor, combine the cooked blueberries with the remaining 1 cup of butter, the zest of 2 lemons, 2 tablespoons of thyme leaves, 2-3 tablespoons of honey, and a pinch of salt.
- Process until the mixture is well combined and has a dark purple color.
- Taste and adjust sweetness with additional honey if desired.
- Place the mixture on a separate piece of parchment paper and roll into a log. Refrigerate until set.
To Serve:
- Slice the chilled butters and arrange them alternately to showcase the two tones. Garnish with additional thyme leaves or lemon zest if desired.
