Ingredients
Instructions
- Begin by gently heating a large saucepan over medium heat
- Add 1 finely chopped onion to the pan and sauté until golden and fragrant.
- Add 2 cloves of minced garlic and sauté for a minute more.
- Add 4 cups of vegetable broth and bring to a low simmer.
- Add 2 cups of broccoli florets and allow to cook for another 5 minutes.
- Reduce the heat to low and add 1/2 cup of toasted almond slices.
- Allow the almond slices to toast lightly as the soup simmers for another 10 minutes.
- Reduce the heat to very low and blend the soup with an immersion blender.
- Add 1 tablespoon of lemon juice and season to taste with sea salt and freshly ground black pepper.
- Serve the soup warm, garnished with a few toasted almond slices and a sprinkle of freshly chopped parsley.
